Hot Cross Buns

I just love baking these Easter favourites. They are so easy and disappear very quickly once they are baked.

Using a stand mixer with the dough hook, throw 4 1/4 cups of bread flour, 3 teaspoons yeast, 1/2 cup caster sugar, 2 teaspoons allspice, 2 teaspoons cinnamon and a pinch of salt into the bowl. Mix briefly.

Melt 50 grams of unsalted butter and add 1 1/2 cups of milk. Mixture will be warm. Add this to the bowl and then add 1 1/2 cups sultanas and the zest of 1 orange. Mix until you have a smooth dough. Dough should come away from side of the bowl.

Cover the bowl with cling film and let this rise in a warm place for about an hour or until it doubles in size.

Once risen, roll the dough into a long log and cut into 12 pieces. Form these into balls and place on a lined baking sheet.

Spray some cling film with oil and cover again and place in a warm spot until they rise again.

For the crosses, mix 1/2 cup flour with 5 tablespoons water. Place into a piping bag to pipe the crosses onto the buns.

Bake at 180°C for about 20 minutes until browned

While the buns are still hot, you glaze them. You can make an easy glaze using 1 tablespoon of apricot jam, 1 teaspoon marmalade and 2 teaspoons water mixed together. Brush this over the hot buns.

Enjoy slathered in butter with a cup of tea
